Sandwich Day

Something very rare happened today. I had sandwiches for both lunch and dinner. And oh, my, were they good!

Gyro with grilled chicken

As I’ve said before, we usually go out for lunch on Saturday. Ken and I were both in the mood for Greek food, which isn’t all that unusual. We enjoy going to Chris’ Taverna in Lantana, which I refer to as Dancing Zorba’s after the restaurant in My Big, Fat Greek Wedding. Chris’ is very much like Zorba’s, definitely a family business, and the food is good and plentiful. But during the winter season, it’s always packed. Plus, the shopping center where it’s located is always busy, and parking is an issue. Today was not a day to go there.

Instead, we went to Great Greek Mediterranean Grill on Okeechobee Boulevard. This is a fast casual restaurant, where you order at the counter and they bring the food to your table. Everything is fresh and delicious. My usual order is a small Greek salad, which is plenty big, with a skewer of grilled chicken. That’s what I had planned to order, but instead, when we got to the counter, I decided on a gyro with chicken. I decided against adding a side; the sandwich was plenty. And oh, it was delicious! The chicken was grilled perfectly, there were plenty of veggies, and a delicious tzatziki topped it. I managed to eat it without losing half the contents of the pita, but I couldn’t really set it down on my plate. Ken ordered the same thing, and we agreed that we’d made an excellent choice.

I’d planned tuna salad subs for dinner, so that’s why it was a two sandwich day. I make two versions of tuna salad, although I don’t use a recipe for either. One is a typical recipe, with chopped celery and onion, plus mayonnaise and seasonings. But Ken’s favorite is the way my mother made tuna salad, mixing pickle relish and mayonnaise with the tuna. That’s what I made tonight. We have only recently discovered the wonder that is Duke’s mayonnaise. I’d always been of the opinion that there wasn’t really any difference between brands of commercial mayonnaise. Once I tasted Duke’s, I realized that I was wrong. It has a unique flavor that kicks my tuna salad up a notch. I melted cheddar cheese on sub rolls, and added lettuce and tomato to our subs. Along with pickles and chips, it was a great casual supper.

    We also had Greek today for lunch! We were invited to a local church for Greek Food Festival with our son and family. Chicken gyros were our choice also as well as sharing spinach spanakopita. Good choice!

    Lynn – Sandwiches are under appreciated – you and Ken discovered some amazing examples. What is it about sandwiches? First good bread – and then folding in some of your favorite tastes (not foods – taste is key). Sandwiches are an “art form” – which I think you have uncovered – or revealed. Mare
