Only Three?

What are your family’s top 3 favorite meals?

I let a lot of the daily prompts go by, but I’ll respond to any that involve food. But oh my, is this one hard!

Years ago, I read that everyone should have three weeks worth of meals that they could prepare. That’s 21 meals, and if I asked my family for favorite meals, they’d probably come up with more than that number just by naming chicken dishes. So I’m listing three that are among the family favorites, but not necessarily the top three.

Stuffed cabbage

Stuffed cabbage reflects Ken’s Eastern European heritage. His mother made the best halupki, as we refer to the dish. That’s the Slovak name for cabbage rolls, and my version takes elements from several recipes in a Slovak-American cookbook that my mother-in-law gave me. I put sauerkraut on top of the cabbage rolls before cooking. I have to make a big batch if both of our kids are home!

Artichoke sauce for pasta

My family is crazy for artichokes. We have several different chicken and artichoke dishes, and other recipes that include artichokes, but probably everyone’s favorite is what we call pasta with artichokes. The sauce is nothing more than olive oil, garlic, lemon juice, and artichokes, with some fresh basil added at the end. There’s quite a story attached to the dish, which I’ll tell in another post.

The final dish is one I’ve written about before, Moroccan chicken with lemon and olives. I could make this more often than I do, because it’s one of my favorite things to eat. But is it my favorite? I’ll have to think about that 😄

    Lynn – anything that involves food excites me (you know that!). The Reynolds family favorites are almost exclusively based on the meals they ask for when they visit. Spinach Egg Soup, Lasagna (sorry, guys, but I make a great lasagna), beef stroganoff – add to that bagels and lox for breakfast – plus an added plug for my quiche (I am not a great cook -but somethings I do very well).
