What are your favorite types of foods?

How do you respond to the today’s prompt when you love to cook and to try new foods? It’s like asking a parent to name their favorite child!

If push comes to shove, I suppose my answer has to be seafood. I love both fish and shellfish. The beauty is that there are so many interesting seafood dishes. All my favorite cuisines feature seafood. It’s so versatile. I love to cook a favorite salmon tagine, but salmon is also delicious baked in phyllo. There’s also a recipe in one of my cookbooks that I’ve notated “best salmon ever,” that’s an oven poached fillet with a simple herb and wine sauce.

And then there’s shrimp. Last night, I cooked them in a sauce of roasted peppers, tomatoes, and smoked paprika. A few weeks ago, I combined them with black beans and cilantro-lime rice. A family favorite is the Greek dish of shrimp baked in tomato sauce topped with feta.

Even Ken gets into the seafood act when he cooks. He makes a mean crab mac n’ cheese.

Even when we go out to eat, my eyes go first to the seafood entrees. When we went out for lunch a couple weeks ago, I didn’t think twice about ordering a seafood burrito that turned out to be a great choice. Our plans for this morning are to visit the botanical garden and then stop for lunch at a favorite restaurant. I wonder what I’ll order today…

    Lynn, Great question – difficult to answer. One answer is who am I cooking for – quests – family or just me. Favorite meals on the quest list – quiche, lasagna – shrimp bake (and many others.) When my guys are here – spinach egg soup is a favorite. As for me – meals that provide me with leftovers (love to cook – but not every day). Seafood, of course, but we should not forget to under rated chicken (so versatile – and have to say – easy on the budget). Thanks for asking. Mary
